Almond Cracker recipe

Thanks to Elizabeth at Caveman Food for inspiration to make this yummy P3 cracker. I will try it again soon, maybe next batch with stevia and cinnamon.

Ingredients are:

1 cup ground almonds

1 egg white

sea salt

You can grind your own almond meal in a food processor or blender (coffee grinder, if not needing a lot). When grinding your own, in a food processor, watch it carefully so it doesnt turn into almond butter. It’s best to freeze the almonds first (toasted or untoasted) then process them straight from the freezer a few at a time. If pressed for time just use store bought, it will be more expensive but more time economical. 

Ground Almonds can go rancid very quickly, so store in the freezer in a sealed container. Usually the rule is, the higher the fat content in a nut, the colder you keep it.

    i use blanched almonds…almond skin tends to be bitter
